Chocolate Brioche

A delightful, airy brioche enriched with cocoa powder and grated chocolate. Perfect for the holiday season or any occasion. Preparation Time: 2 hours + rising time
Serving Size: 5 loaves or one loaf pan
Ingredients:
- 1 dl milk
- 2 packets dry yeast
- 2 tablespoons sugar
- 1 tablespoon salt
- 4 whole eggs
- 4 egg yolks
- 6-7 dl whole wheat flour
- 2 tablespoons organic cocoa powder
- 30 g grated dark chocolate (77%)
- 150 g melted butter
- For brushing: 2 egg yolks
Instructions:
1. Warm the milk to body temperature.
2. In a bowl, combine the warm milk, dry yeast, salt, and sugar.
3. Whisk the egg yolks and whole eggs until frothy.
4. Add the milk-yeast mixture to the eggs and mix well.
5. Combine the flour, cocoa powder, and grated chocolate, then add to the dough mixture.
6. If using a stand mixer, knead the dough for 10 minutes. If kneading by hand, knead for about 15-20 minutes.
7. Add the melted butter to the dough and mix well.
8. Divide the dough into five pieces or shape it into a loaf for a bread pan.
9. Allow the dough to rise for at least one hour or overnight in the refrigerator.
10. Brush the risen dough with egg yolk.
11. Bake at 175°C (350°F) for about 30 minutes, or until the brioche is beautifully golden brown.
