A delicious vegetable stew perfect for a festive meal. It's full of flavor and color, making it an excellent choice for vegetarians. Preparation time is about 1 hour, and it serves 4-6 people.

Ingredients:

- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 2 carrots, diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 200 g mushrooms, sliced
- 1 can (400 g) crushed tomatoes
- 2 dl vegetable broth
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- 100 g frozen peas
- Fresh parsley for garnish

Instructions:

1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté for about 5 minutes until soft.
2. Add carrots, bell pepper, zucchini, and mushrooms. Cook for another 10 minutes until the vegetables start to soften.
3. Pour in the crushed tomatoes and vegetable broth. Add oregano, salt, and black pepper. Stir well.
4. Allow the stew to simmer on low heat for about 20 minutes until the vegetables are completely cooked.
5. Stir in the frozen peas and heat for a few more minutes.
6. Serve the stew garnished with fresh parsley.
