Ingredients:
- 400 g pasta (e.g., spaghetti) - 150 g bacon or pancetta
- 2 large eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions. 2. Meanwhile, heat a skillet over medium heat and cook the bacon or pancetta until crispy. Add minced garlic to the skillet and sauté for another minute.
3. In a bowl, crack the eggs and mix in the grated Parmesan cheese, salt, and black pepper.
4. Once the pasta is cooked, reserve about 1 cup of the cooking water and drain the pasta.
5. Add the hot pasta to the skillet with the bacon and garlic. Mix well.
6. Remove the skillet from heat and pour the egg mixture over the pasta. Stir quickly to let the eggs gently cook into a sauce. Add reserved cooking water as needed for a creamy consistency.
7. Serve immediately with fresh parsley on top, if desired.
