These delicious mint chocolate cookies are the perfect blend of oats and refreshing mint. They make an excellent treat for coffee breaks and can be easily made with pantry staples. Preparation time: 30 minutes
Serving size: Makes about 12 cookies
Ingredients:
- 1 cup rolled oats - 1 cup all-purpose flour
- 3 tablespoons coconut sugar (or brown/regular sugar)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup coconut oil (melted)
- 1/4 cup plant-based milk
- 100 g mint chocolate (or dark chocolate with over 70% cocoa)
Instructions:
1. Preheat the oven to 180°C (350°F).2. In a bowl, combine rolled oats, flour, coconut sugar, baking powder, and salt.
3. Add the melted coconut oil and plant-based milk to the mixture. Stir well until the dough is smooth.
4. Chop the mint chocolate and fold it into the dough gently.
5. Shape the dough into balls and place them on a baking sheet lined with parchment paper. If using a muffin tray, shape the dough into muffin cups.
6. Bake in the oven for about 10-12 minutes, or until the cookies are golden brown.
7. Allow to cool slightly before serving.
