Serving Size: 4 servings
Ingredients:
- 400 g spaghetti - 150 g bacon or pancetta
- 2 large eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves, minced
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the spaghetti in salted boiling water according to package instructions until al dente.2. While the pasta is cooking, fry the bacon or pancetta in a pan over medium heat until crispy. Add the minced garlic and sauté for another minute.
3. In a bowl, whisk the eggs and mix in the grated Parmesan cheese. Season with salt and black pepper.
4. Once the pasta is done, drain it and reserve some cooking water. Add the pasta to the pan with the bacon.
5. Remove the pan from heat and stir in the egg mixture with the pasta. Add a little reserved cooking water if needed to make the sauce creamy.
6. Serve immediately and garnish with fresh parsley if desired.
