Ingredients:
- 200 g pasta (spaghetti or penne)
- 100 g bacon or pancetta
- 2 eggs
- 50 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to the package instructions until al dente.
2. Meanwhile, cook the bacon or pancetta in a skillet over medium heat until crispy. Add the minced garlic and sauté for another minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and black pepper to taste.
4. Once the pasta is cooked, drain it and reserve a little pasta water.
5. Add the hot pasta to the skillet with the bacon and mix well. Remove the skillet from the heat.
6. Pour the egg mixture over the pasta and stir quickly to coat the pasta, allowing the eggs to gently cook and create a creamy sauce. If the sauce is too thick, add a bit of reserved pasta water.
7. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
