A delicious Finnish Independence Day pie featuring a buttery base and mixed berries.
Preparation Time: 50 minutes
Serving Size: 8 slices
Ingredients:
- 200 g butter
- 2 dl sugar
- 4 dl flour
- 2 tsp baking powder
- 2 eggs
- 1 dl milk
- 1 tsp vanilla sugar
- 2 dl berries (such as blueberries or lingonberries)
Instructions:
1. Preheat the oven to 175°C (350°F).
2. Melt the butter and let it cool slightly.
3. In a bowl, mix the sugar and melted butter together.
4. Add the eggs one at a time, mixing well after each addition.
5. In another bowl, combine the flour, baking powder, and vanilla sugar.
6. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until smooth.
7. Pour the batter into a greased pie dish.
8. Sprinkle the berries on top of the batter.
9. Bake in the oven for about 30-40 minutes, until the top is beautifully golden brown.
10. Allow to cool before serving. Enjoy!
