A delicious Finnish blueberry pie with a creamy filling, perfect for dessert or a sweet treat. Preparation Time: 15 minutes
Cooking Time: 40-50 minutes
Serving Size: 8-10 servings
Ingredients:
- 300 g margarine or butter
- 3 dl sugar
- 3 eggs
- 2 tsp baking powder
- 1½ dl rye flour
- About 4 dl all-purpose flour
- 200 g blueberries
- 400 g quark
- 1 tsp vanilla sugar
Instructions:
1. Preheat the oven to 175°C (350°F).
2. Beat the margarine or butter and sugar together until light and fluffy.
3. Add the eggs one at a time, continuing to beat the mixture.
4. In a separate bowl, mix the baking powder, rye flour, and all-purpose flour. Gradually add this mixture to the batter.
5. Fold in the blueberries and quark, then add the vanilla sugar.
6. Pour the batter into a greased pie dish.
7. Bake in the oven for about 40-50 minutes, until the top is a beautiful golden brown.
8. Allow to cool before serving.
