Easy Blueberry Curd Pie

Ingredients:
- 100 g butter
- 1 egg
- ½ dl Indian sugar
- 1 dl buckwheat flour
- 1 dl buckwheat flakes
- 3 tbsp potato starch
- 2 tsp baking powder
- 250 g cottage cheese
- 1 egg
- 2 tsp vanilla sugar
- 5 dl blueberries
Instructions:
1. Cream the softened butter and Indian sugar together until fluffy.
2. Add the egg to the mixture and mix well.
3. In a separate bowl, combine the buckwheat flour, buckwheat flakes, potato starch, and baking powder. Gradually add the dry ingredients to the butter mixture and stir until a smooth dough forms.
4. Spread the dough evenly in a pie dish using a spatula.
5. Evenly distribute the blueberries over the dough.
6. In another bowl, mix the cottage cheese, egg, and vanilla sugar. Pour this mixture over the blueberries.
7. Bake in a preheated oven at 175°C (350°F) for about 1 hour, or until the top is beautifully golden brown.
8. Allow the pie to cool before serving.
