A delightful and moist blueberry curd tart, perfect for coffee breaks or dessert. Preparation time: 1 hour
Serving size: 8-10 servings
Ingredients:
- 200 g cottage cheese
- 1 egg
- Blueberries, to taste
- 200 g sour cream
- 100 g baking margarine
- 1 dl sugar
- 1 tsp vanilla sugar
- 3½ dl all-purpose flour
- 1 tsp baking powder
- 2 tsp potato starch
Instructions:
1. Melt the baking margarine and let it cool slightly.
2. In a bowl, whisk together the egg, sugar, and melted margarine until fluffy.
3. Add the all-purpose flour, baking powder, and vanilla sugar to the mixture. Mix well.
4. Incorporate the cottage cheese and sour cream into the batter until smooth.
5. Allow the batter to rest in the refrigerator for about 15 minutes.
6. Pour the batter into a greased tart pan.
7. Sprinkle blueberries over the batter.
8. Bake at 175 °C (350 °F) for about 30-40 minutes, until the tart is beautifully golden brown.
9. Let cool before serving.
