A vibrant and creative pasta dish that celebrates the joy of life's little moments. Preparation time: 30 minutes. Serves: 4.Ingredients:
- 300 g pasta (e.g., penne or fusilli) - 2 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 150 g fresh spinach
- 100 g feta cheese, crumbled
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain and reserve a little cooking water. 2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3 minutes until soft.
3. Add the crushed garlic and diced bell pepper, and cook for another 2-3 minutes.
4. Stir in the cherry tomatoes and cook until they start to soften, about 5 minutes.
5. Add the fresh spinach and mix until it wilts.
6. Combine the cooked pasta with the vegetables and mix well. Add a bit of reserved cooking water if the mixture seems too dry.
7. Season with salt and pepper. Gently fold in the crumbled feta cheese.
8. Serve the dishes garnished with fresh basil.
