This delicious bake combines lentils and sweet potatoes with a festive spice blend, where ginger adds flavor and warmth. A perfect addition to your Christmas table! Preparation Time: 1 hour
Serving Size: 4-6 servings
Ingredients:
- 1 cup green lentils
- 1 lb sweet potatoes
- 1 onion
- 2 garlic cloves
- 2 tablespoons The Ginger People organic ginger syrup
- 1/2 cup The Ginger People organic ginger puree
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1/2 cup grated cheese (optional)
Instructions:
1. Cook lentils according to package instructions and drain.
2. Peel and cube sweet potatoes. Boil in salted water for about 10-15 minutes until tender. Drain and mash.
3. Chop onion and garlic. Heat olive oil in a skillet and sauté onion and garlic until soft.
4. Add cooked lentils, mashed sweet potatoes, ginger syrup, ginger puree, thyme, rosemary, salt, and pepper to the skillet. Mix well.
5. Pour vegetable broth into the mixture and let it simmer on low heat for about 10 minutes.
6. Transfer the lentil-sweet potato mixture to a baking dish and smooth the top. Sprinkle with grated cheese if using.
7. Bake in a preheated oven at 400°F (200°C) for about 25-30 minutes until the top is beautifully golden brown.
8. Allow to cool slightly before serving.
