A warm and comforting soup made with fresh ginger and carrots, perfect for cozy evenings. Preparation Time: 35 minutes
Serving Size: 4 servings
Ingredients:
- 500 g carrots
- 1 onion
- 2 garlic cloves
- 1 tbsp fresh grated ginger
- 1 liter vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and chop the carrots, onion, and garlic.
2. Heat the olive oil in a pot and sauté the onion and garlic until soft.
3. Add the carrots and grated ginger, mixing well and sauté for a few more minutes.
4. Pour the vegetable broth into the pot and bring to a boil. Let it simmer for 20-25 minutes until the carrots are tender.
5. Blend the soup with an immersion blender or in a regular blender until smooth.
6. Season with salt and pepper to taste.
7. Serve the soup garnished with fresh parsley and enjoy!
