Ingredients:
- 1 cup sugar
- 1/2 cup brown sugar
- 1 1/2 cups finely grated carrots
- 1/2 cup oil
- 3 eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 cup nuts (e.g., walnuts)
- 1/2 cup raisins (optional)
Instructions:
1. Preheat the oven to 350°F (325°F for convection).
2. Grease and flour a cake pan.
3. In a bowl, whisk together the sugars and oil. Add the eggs one at a time, mixing well after each addition.
4. Stir in the grated carrots until well combined.
5. In another bowl, mix the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. Gradually add the dry ingredients to the wet mixture.
6. Fold in the nuts and raisins gently.
