A delightful cake featuring a light base filled with a delicious blueberry and forest berry jam, complemented by a creamy white chocolate mousse. Perfect for celebrations like christenings.
Preparation Time: 1 hour (plus cooling time)
Serving Size: 10-12 servings
Ingredients:
- 200 g butter
- 2 dl sugar
- 4 eggs
- 4 dl all-purpose flour
- 1 dl milk
- 1 tsp baking powder
- 1 tsp vanilla sugar
- 300 g blueberry jam
- 300 g forest berry jam
- 200 g white chocolate
- 2 dl heavy cream
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. Beat the butter and sugar together until light and fluffy. Add the eggs one at a time, continuing to mix.
3. In a separate bowl, combine the all-purpose flour, baking powder, and vanilla sugar. Gradually mix this dry mixture into the batter alternately with the milk. Mix well.
4. Pour the batter into the prepared pan and bake for about 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool.
5. Melt the white chocolate and let it cool slightly. Whip the heavy cream and gently fold in the melted chocolate.
6. Once the cake has cooled, cut it in half. Spread blueberry jam on the bottom layer, followed by forest berry jam, and then the white chocolate mousse.
7. Place the top layer of the cake on and cover the entire cake with the remaining white chocolate mousse.
8. Decorate as desired and refrigerate the cake for a while before serving.
