Ingredients:
- 400 g chicken breast
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 200 g cherry tomatoes, halved
- 150 g fresh spinach
- 100 g feta cheese, crumbled
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions:
1. Heat olive oil in a skillet over medium heat.
2. Add chopped onion and crushed garlic, sauté until softened.
3. Add chicken breasts to the skillet and cook until golden brown on both sides. Season with salt and pepper.
4. Stir in the diced bell pepper and halved cherry tomatoes, cook for about 5 minutes.
5. Add fresh spinach and oregano, mixing until spinach is just wilted.
6. Remove the skillet from heat and sprinkle crumbled feta cheese on top.
7. Serve immediately with rice or potatoes.
