Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 200 g fresh spinach
- 200 ml heavy cream
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp lemon juice (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a little pasta water.
2. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until golden brown.
3. Add fresh spinach to the skillet and cook until wilted.
4. Pour in the heavy cream and stir well. Heat through but do not boil.
5. Add grated Parmesan cheese and stir until melted. Season with salt, pepper, and lemon juice if desired.
6. Add the cooked pasta to the skillet and toss until well coated in the sauce. If the sauce is too thick, add a little reserved pasta water.
7. Serve immediately and enjoy!
