A delicious treat reminiscent of winter festivities, these Russian pancakes are perfect for special occasions.

Serving Size: 4 servings

Ingredients:

- 2 dl buckwheat flour
- 1 dl all-purpose flour
- 1 tsp salt
- 1 tsp sugar
- 1 dl milk
- 1 dl water
- 25 g fresh yeast or 1 packet of dry yeast
- 2 eggs
- 2 tbsp melted butter
- 1 dl sour cream (for serving)
- 150 g caviar (for serving)
- 1 dl chopped red onion (for serving)
- Fresh herbs (e.g., dill, for serving)

Instructions:

1. Dissolve the yeast in warm milk and water. Add salt and sugar.
2. Mix the buckwheat and all-purpose flour together, then incorporate the flour mixture into the yeast mixture.
3. Add the eggs and melted butter to the batter. Mix well until smooth.
4. Allow the batter to rise under a cloth for about an hour until it doubles in size.
5. Heat a frying pan and add a little butter. Pour batter onto the pan to form small pancakes.
6. Cook the blinis on both sides until golden brown.
7. Serve the blinis with sour cream, caviar, chopped red onion, and fresh herbs.
