Ingredients:
- 2 tablespoons oil (e.g. sesame or canola oil) - 1 onion, sliced
- 2 garlic cloves, crushed
- 1 bell pepper, sliced
- 2 scallions, chopped
- 200 g broccoli, cut into florets
- 200 g mushrooms, sliced
- 1 carrot, sliced
- 150 g noodles (e.g. rice or egg noodles)
- 3 tablespoons soy sauce
- 1 tablespoon sweet chili sauce
- 1 tablespoon ginger, grated
- Sesame seeds for garnish
Instructions:
1. Heat the oil in a large pan or wok over medium heat. 2. Add the onion and garlic, sauté for about 2 minutes.
3. Add the bell pepper, scallions, broccoli, mushrooms, and carrot. Stir-fry for about 5-7 minutes, until the vegetables are tender yet crispy.
4. Cook the noodles according to package instructions and drain.
5. Add the noodles to the wok with the vegetables.
6. Pour the soy sauce, sweet chili sauce, and grated ginger over the noodles and vegetables, and mix well.
7. Stir-fry for a few more minutes to combine all the flavors.
8. Serve hot, garnished with sesame seeds.
