Ingredients:

- 4 eggs
- 2 tortillas
- 1 cup tomato sauce
- 1 small jalapeño (finely chopped)
- 1/2 cup shredded cheese (e.g., cheddar)
- 1/4 cup fresh cilantro (chopped)
- Salt and pepper to taste
- 1 tablespoon olive oil

Instructions:

1. Heat the olive oil in a skillet over medium heat.
2. Add the chopped jalapeño to the skillet and sauté for about 2 minutes until softened.
3. Pour the tomato sauce into the skillet and bring to a simmer. Season with salt and pepper.
4. Carefully crack the eggs on top of the sauce. Cover the skillet with a lid and cook until the eggs reach your desired doneness (about 5-7 minutes).
5. Meanwhile, warm the tortillas in another skillet or in the microwave.
6. Once the eggs are cooked, gently lift them from the sauce and place them on the tortillas.
7. Sprinkle shredded cheese and fresh cilantro over the top.
8. Serve immediately and enjoy!
