A delicious and fulfilling egg dish featuring savory sausage, served with tortillas, fresh salad, and avocado. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g hearty sausage or ground meat/chicken - 1 onion
- 2-3 garlic cloves
- 1 chili pepper
- 1 bell pepper
- 1 can crushed tomatoes (e.g., Mutti)
- 4 eggs
- 1 dl fresh cilantro
- 1 tsp oregano
- 0.5 tsp chili powder
- Salt
- Oil for frying
- Tortilla wraps
- Avocado
- Fresh salad
Instructions:
1. Chop the onion, chili, and bell pepper into small pieces. 2. Finely chop the fresh cilantro.
3. In a skillet, heat a small amount of oil and cook the sausage or meat until browned.
4. Add the chopped onion, chili, and bell pepper to the skillet and sauté briefly.
5. Pour in the crushed tomatoes and add oregano, chili powder, salt, and chopped cilantro. Let it simmer for about 15 minutes on low heat.
6. Once the sauce has thickened, create four wells in the sauce and crack the eggs into them.
7. Increase the heat and cook the eggs to your desired doneness.
8. Serve with tortilla wraps, avocado, and fresh salad.
