Ingredients:
- 2 tomatoes - 1 avocado
- 1 onion
- 1 lime
- Oil
- Salt
- Pepper
- Tabasco sauce
- 4 eggs
- Tortillas
- 1 can of black beans
- Jalapeño slices
- Fresh cilantro
- Feta cheese or shredded cheddar
Instructions:
1. Chop the tomatoes, avocado, and onion into small pieces. Mix them together in a bowl. Drizzle with a little oil and lime juice. Season with salt, pepper, and Tabasco sauce to taste.2. Fry the eggs in oil, seasoning with salt. Warm the tortillas and layer them with the salsa, black beans, jalapeño slices, cilantro, and crumbled feta or shredded cheddar. Top with the fried eggs.
