A delicious Mexican breakfast featuring eggs, salsa, and jalapeños, perfect for any time of the day!

Ingredients:

- 4 eggs
- 2 tortillas
- 1 avocado
- 1 small onion, chopped
- 2 tomatoes, diced
- 1/2 cup fresh cilantro, chopped
- 1-2 jalapeños, sliced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- Lime juice (to taste)

Instructions:

1. Heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until soft.
2. Add the diced tomatoes and sliced jalapeños to the skillet. Cook for about 5 minutes.
3. Crack the eggs into the skillet over the tomato-jalapeño mixture. Season with salt and black pepper. Cook until the eggs are set but the yolks are still slightly runny.
4. Warm the tortillas in another skillet until they are heated through and slightly crispy.
5. Place the tortillas on plates, top with the egg mixture, and slice the avocado on top. Garnish with fresh cilantro and lime juice.
