Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g fresh basil, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and set aside, reserving a little pasta water.
2. Heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for about one minute.
3. Add the bell pepper and zucchini to the skillet and cook for about 5-7 minutes until the vegetables are tender.
4. Add the cherry tomatoes and cook for a few more minutes until they begin to soften.
5. Toss the cooked pasta into the vegetable mixture. If needed, add a little reserved pasta water to keep it moist.
6. Season with salt, pepper, and chopped basil. Mix well.
7. Serve the pasta topped with grated Parmesan cheese.
