Ingredients
- 1 tbsp olive oil - 1 onion, chopped
- 3 garlic cloves, minced
- 1 red chili, chopped
- 1 tsp cumin
- 1 tsp smoked paprika
- 400 g canned crushed tomatoes
- 1 liter vegetable broth
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 bell pepper, diced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft. 2. Add the minced garlic and chopped chili, cooking for an additional minute.
3. Sprinkle in the cumin and smoked paprika, stirring well.
4. Pour in the crushed tomatoes and vegetable broth, mixing and bringing to a boil.
5. Add the black beans, kidney beans, and diced bell pepper. Let the soup simmer on low heat for about 15 minutes.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with fresh cilantro.
