A delicious venison tenderloin served with a rich red wine sauce, crispy potato croquettes, and a green bean-bacon sauté. Perfect for special occasions. Preparation Time: 1 hour

Ingredients:
Venison Tenderloin: - 4 venison tenderloin steaks (about 160 g each)
- Sea salt
- Freshly ground black pepper
Green Bean-Bacon Sauté:
- 150 g fresh green haricot beans
- ½ package bacon, chopped
- 1 shallot, sliced
- 1 garlic clove, minced
Pommes Dauphine:
- 3-4 large potato croquettes per person
- 1 liter canola or other frying oil
Red Wine Sauce:
- 10 cm leek
- 10 cm carrot
- 10 cm celery
- 1 medium shallot
- 1 tablespoon butter
- 1 tablespoon cooking oil
- Pinch of sugar
- 300 ml red wine
- 200 ml demi-glace
- Salt
- Black pepper
- Cooking juices from the steaks
Instructions:
1. Venison Tenderloin: Remove any silverskin from the steaks and bring them to room temperature. Sear the steaks in a hot pan and season with salt and pepper. Remove the pan from heat and cover or place in an oven preheated to 125°C (257°F). Monitor the internal temperature, which should reach 52-53°C (126-128°F). Let the steaks rest for a moment.2. Green Bean-Bacon Sauté: Trim the ends off the beans and boil them in salted water for 8 minutes. Drain and set aside. In another pan, cook the bacon until crispy, then add the shallot and sauté until softened. Add the garlic and beans, stirring to combine and cook briefly.
3. Pommes Dauphine: Heat the oil to 180°C (356°F) and fry the croquettes until golden and crispy. Transfer them to an oven set at 125°C (257°F) to keep warm.
4. Red Wine Sauce: Chop the vegetables into small pieces. In a saucepan, heat the butter and cooking oil, and sauté the vegetables until soft. Add the sugar and red wine, simmering until reduced by half. Stir in the demi-glace and season with salt and pepper. Strain the sauce and add the cooking juices from the steaks.
5. Serve the venison tenderloin with the red wine sauce, green bean-bacon sauté, and potato croquettes.
