Ingredients:
- 250 g pasta (e.g., spaghetti or fusilli) - 2 tbsp olive oil
- 1 medium onion, finely chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 200 g mushrooms, sliced
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 400 g crushed tomatoes
- Salt and pepper to taste
- 50 g grated Parmesan cheese (optional)
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve some pasta water.2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.
3. Add the crushed garlic and diced bell pepper. Sauté for another 2-3 minutes.
4. Stir in the sliced mushrooms, oregano, and smoked paprika. Continue cooking until the mushrooms are tender.
5. Add the crushed tomatoes, salt, and pepper. Let the sauce simmer on low heat for about 10 minutes.
6. Mix the cooked pasta into the sauce. Add a bit of reserved pasta water if the pasta seems dry.
7. Serve immediately topped with grated Parmesan cheese and fresh basil, if desired.
