A delicious and hearty chicken soup with sweet potatoes and bell peppers. Preparation Time: 10 minutes

Serving Size: 4 servings
Ingredients:
- 500 g chicken (breasts or thighs)
- 2 medium sweet potatoes
- 1 large onion
- 2 garlic cloves
- 1 red bell pepper
- 1 green bell pepper
- 1 chili (or to taste)
- 1 liter chicken broth
- 1 tsp oregano
- 1 tsp paprika powder
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions:
1. Peel and dice the sweet potatoes into small cubes.
2. Finely chop the onion and garlic. Dice the bell peppers and chili as well.
3. Heat the olive oil in a large pot and add the onion, garlic, bell peppers, and chili. Sauté for 5 minutes until the vegetables soften.
4. Add the sweet potatoes and chicken to the pot. Cook for a few minutes until the chicken gets a bit of color.
5. Pour the chicken broth into the pot and add oregano, paprika, salt, and pepper. Stir well.
6. Let the soup simmer on low heat for about 25-30 minutes until the sweet potatoes and chicken are cooked through.
7. Remove the chicken from the soup, shred it into strips, and return it to the pot.
8. Serve the soup topped with fresh parsley.
