Ingredients:
- 250 g chicken fillets, sliced
- 1 can coconut milk
- 1 chicken or vegetable stock cube
- 1 tsp dried ginger
- 1 tsp chili powder
- 1 onion
- 2 garlic cloves
- 2 carrots
- 1 red bell pepper
- 100 g peas
- Salt and pepper to taste
- Fresh coriander for garnish
Instructions:
1. Peel and chop the onion and garlic cloves.
2. Peel and slice the carrots.
3. Heat a little oil in a pot and sauté the onion and garlic until soft.
4. Add the chicken fillets and cook until they are done.
5. Stir in the carrots and bell pepper.
6. Pour in the coconut milk and add the stock cube, ginger, and chili powder. Mix well.
7. Allow the soup to simmer on low heat for about 15 minutes.
8. Add the peas and cook for an additional 5 minutes.
9. Season with salt and pepper to taste.
10. Serve the soup garnished with fresh coriander.
