Ingredients:

- 1 medium head of cabbage
- 2 tablespoons salt
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 1 tablespoon sugar (optional)
- 1 cup water

Instructions:

1. Shred the cabbage into thin strips.
2. Place the shredded cabbage in a large bowl and add the salt, black pepper, cumin, and sugar. Mix well.
3. Let the mixture rest for about 10-15 minutes to allow the cabbage to soften.
4. Squeeze the cabbage strips by hand to release some of the liquid.
5. Add the water and mix again.
6. Transfer the cabbage mixture to a clean glass jar or another storage container. Press it down tightly to remove any air pockets.
7. Allow the sauerkraut to ferment at room temperature for about 3-7 days, depending on your desired tanginess. Check the flavor daily.
8. Finally, move the sauerkraut to the refrigerator, where it will keep for several weeks.
