Ingredients:
- 400 g pasta (spaghetti or fettuccine)
- 150 g bacon or pancetta, chopped
- 2 eggs
- 100 g Parmesan cheese, grated
- 2 garlic cloves, crushed
- Salt to taste
- Black pepper to taste
- Fresh parsley, chopped (optional)
Instructions:
1. Cook the pasta in a large pot of salted water according to package instructions until al dente.
2. Heat a skillet over medium heat and add the bacon or pancetta. Cook until crispy and golden brown. Add the crushed garlic to the pan and sauté for about one minute.
3. Once the pasta is cooked, drain it in a colander, reserving a bit of the cooking water. Add the pasta to the skillet with the bacon.
4. In a bowl, whisk together the eggs and grated Parmesan cheese. Quickly add the mixture to the pasta and toss to combine. If needed, add a little reserved cooking water to keep the sauce creamy.
5. Season with black pepper and salt to taste. Garnish with chopped parsley if desired.
6. Serve immediately.
