A delightful and refreshing lemon pie with a crispy crust and smooth lemon filling. Perfect for dessert or coffee breaks at Easter celebrations.
Preparation Time: 1 hour 30 minutes
Serving Size: 8-10 servings
Ingredients:
- 200 g butter
- 1 dl sugar
- 3 dl all-purpose flour
- 1/2 dl cold water
- 4 eggs
- 2 dl sugar (for filling)
- 1 dl lemon juice
- 2 tbsp lemon zest
- 1 dl cornstarch
- 1/4 tsp salt
- (optional: meringue for topping)
Instructions:
1. Prepare the pie crust: Cream together the butter and sugar in a bowl. Add the all-purpose flour and cold water. Mix until a smooth dough forms.
2. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
3. Preheat the oven to 180°C (350°F).
4. Roll out the dough and line a pie dish. Prick the bottom with a fork and pre-bake in the oven for about 15 minutes.
5. Prepare the lemon filling: Whisk together the eggs, sugar, lemon juice, lemon zest, cornstarch, and salt in a bowl.
6. Pour the filling over the pre-baked crust and bake in the oven for about 30 minutes, or until the filling is set.
7. Allow to cool at room temperature, then transfer to the refrigerator to chill and set.
8. If desired, prepare meringue and spread it over the pie before serving.
