Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 200 g fresh spinach
- 200 ml heavy cream
- 1 onion
- 2 garlic cloves
- 50 g Parmesan cheese (grated)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a little pasta water.
2. Peel and finely chop the onion and garlic.
3. Heat the olive oil in a frying pan over medium heat. Add the onion and garlic, and sauté until softened.
4. Add the fresh spinach to the pan and cook until wilted.
5. Pour the heavy cream into the pan and mix well. Let it simmer for a few minutes.
6. Add the cooked pasta to the pan and stir. If the pasta seems too dry, add a little reserved pasta water.
7. Season with salt and pepper. Stir in the grated Parmesan cheese.
8. Serve immediately and enjoy!
