Ingredients:
- 300 g pasta (e.g., spaghetti)
- 150 g bacon or pancetta
- 2 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain the pasta and reserve a little cooking water.
2. In a pan over medium heat, cook the bacon until crispy. Add the minced garlic and sauté for an additional minute.
3. In a bowl, crack the eggs and add the grated Parmesan cheese, salt, and black pepper. Mix well.
4. Once the pasta is cooked, add it to the pan with the bacon and garlic. Remove the pan from heat.
5. Pour the egg mixture over the pasta and stir quickly. If needed, add a little reserved cooking water to achieve a creamy sauce.
6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
