Ingredients:
- 1 cup pumpkin puree - 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions:
1. Preheat the oven to 350°F (180°C).2. In a large bowl, mix together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, and vanilla extract.
3. Add the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix until well combined.
4. If desired, fold in the chocolate chips into the dough.
5. Scoop small mounds of dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
6. Bake in the oven for about 12-15 minutes or until the cookies are golden brown.
7. Allow to cool before serving.
