Serving Size: 4 servings
Ingredients:
- 1 kg pumpkin, diced - 1 onion, chopped
- 2 garlic cloves, crushed
- 2 tbsp olive oil
- 1 liter vegetable broth
- 100 ml cream (or plant-based cream)
- Salt and pepper to taste
- Fresh herbs (e.g., parsley or thyme) for garnish
Instructions:
1. Sauté the onion and garlic in olive oil in a pot over medium heat until they are soft. 2. Add the diced pumpkin to the pot and mix well. Cook for about 5 minutes.
3. Pour in the vegetable broth and let the soup simmer for about 15-20 minutes, until the pumpkin is tender.
4. Blend the soup with an immersion blender or in a regular blender until smooth.
5. Stir in the cream and season with salt and pepper. Heat the soup for a few more minutes.
6. Serve hot, garnished with fresh herbs.
