Ingredients:
- 1 large fennel bulb- 1 onion
- 2 garlic cloves
- 4 potatoes
- 1 liter fish stock
- 200 g smoked salmon
- 100 ml cream
- 1 tsp dill
- Salt and pepper to taste
- Olive oil for sautéing
- Lemon slices for serving
Instructions:
1. Peel and chop the onion, garlic, and potatoes. Slice the fennel.2. Heat olive oil in a pot and sauté the onion and garlic until soft.
3. Add the fennel and potatoes to the pot, and continue to sauté for about 5 minutes.
4. Pour in the fish stock and simmer until the potatoes are tender (about 15 minutes).
5. Blend the soup until smooth or leave some texture if desired.
6. Stir in the smoked salmon, cream, and dill. Gently heat the soup but do not boil.
7. Season with salt and pepper. Serve with lemon slices.
