A delicious and refreshing salad featuring new potatoes, goat cheese, and sun-dried tomatoes. Perfect as a side dish or light meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 kg new potatoes
- Goat cheese or feta cheese
- Sun-dried tomatoes (diced, in oil)
- 1 pack of arugula (about 1 bunch or half a pack)
- Roasted pine nuts or sunflower seeds
Instructions:
1. Boil the potatoes in salted water until tender. Let cool and chop into bite-sized pieces.
2. Rinse the arugula and chop it into small pieces.
3. In a bowl, combine the cooled potatoes, arugula, sun-dried tomatoes, and crumbled cheese.
4. Add the roasted seeds to the salad.
5. Gently mix the ingredients together and serve.
