Ingredients:
- 1 small head of Chinese cabbage
- 1 carrot
- 1 red bell pepper
- 1 cucumber
- 100g peas (fresh or frozen)
- 50g salted peanuts
- 50g sesame seeds
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 tablespoon olive oil
Instructions:
1. Shred the Chinese cabbage, carrot, red bell pepper, and cucumber into small pieces.
2. If using frozen peas, boil them for a few minutes, then drain and cool.
3. In a large bowl, combine all the vegetables and peas.
4. Toast the sesame seeds in a dry pan until they become slightly golden.
5. In a separate bowl, whisk together the soy sauce, rice vinegar, honey, and olive oil to make the dressing.
6. Pour the dressing over the salad and mix well.
7. Sprinkle the toasted sesame seeds and salted peanuts on top before serving.
8. Serve the salad alongside grilled salmon skewers for a complete meal.
