This winter delicacy salad combines oven-roasted pesto vegetables, whole grain pasta, and fresh greens, creating a delicious and nutritious meal.

Ingredients:

- 1 eggplant
- 2 carrots
- 3 tablespoons pesto
- 250 g whole grain pasta
- 2 dl green beans (fresh or frozen)
- 1 dl cherry tomatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish

Instructions:

1. Preheat the oven to 200°C (400°F).
2. Cut the eggplant and carrots into cubes. In a bowl, mix them with pesto, olive oil, salt, and pepper.
3. Spread the vegetables on a baking sheet and roast in the oven for about 25-30 minutes, until they are tender and slightly golden.
4. Cook the whole grain pasta according to package instructions. Drain and rinse with cold water.
5. Add the cooked pasta to the roasted vegetables and mix well.
6. Gently fold in the green beans and halved cherry tomatoes.
7. Serve the salad topped with fresh basil for garnish.
