Delicious, quick-to-make Christmas cookies that are perfect for the holiday rush, these almond cookies are easy to shape and taste heavenly.
Preparation Time: 1.5 hours (includes chilling)
Serving Size: About 30-40 cookies

Ingredients:

- 75 g butter
- 1 dl brown sugar
- ½ dl syrup
- ½ dl cream
- 2 tsp cinnamon
- ¼ tsp cloves
- 1 tsp ginger
- 2 tsp orange zest
- 2 tsp cardamom
- ½ tsp salt
- 3½-4 dl whole grain spelt flour
- 2 tsp baking soda
- 1-2 dl almond flakes

Instructions:

1. Grind all whole spices finely in a mortar.
2. Melt the butter in a saucepan over low heat.
3. Measure the flour into a mixing bowl, add salt and almond flakes, and mix.
4. Add the sugar, syrup, and ground spices to the melted butter. Mix well.
5. Pour the warm spice mixture over the flour and mix to form a dough.
6. Let the dough cool to room temperature.
7. Shape the dough into logs about 1 cm thick and wrap tightly in plastic wrap.
8. Chill in the refrigerator for at least 2 hours or overnight.
9. Slice the chilled log into cookies or shave thin slices with a cheese slicer.
10. Place the slices on a baking sheet and press them down slightly.
11. Bake at 200°C (392°F) for 8-10 minutes until the cookies are golden brown.
12. Remove the cookies with a spatula and let them cool on a rack.
