Ingredients:
- 4 slices whole grain bread
- 2 avocados
- 4 eggs
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 lemon
- 1/2 cup fresh basil (optional)
Instructions:
1. Toast the whole grain bread slices until golden brown.
2. Cut the avocados in half, remove the pit, and mash the flesh in a bowl with a fork. Add salt, pepper, and squeeze in the lemon juice.
3. Heat olive oil in a pan over medium heat. Crack the eggs into the pan and cook to your desired doneness.
4. Spread the avocado mash on top of the toasted bread.
5. Place the fried eggs on top of the avocado.
6. Garnish with fresh basil if using.
7. Serve immediately and enjoy with friends.
