Ingredients:
- 300 g pasta (such as spaghetti or fusilli)
- 200 g fresh spinach
- 200 ml heavy cream
- 100 g Parmesan cheese (grated)
- 2 cloves garlic (minced)
- 1 tablespoon olive oil
- Salt and black pepper to taste
- (Optional: pine nuts for garnish)
Instructions:
1. Cook the pasta in salted water according to the package instructions. Drain, reserving a little pasta water.
2. Heat olive oil in a pan over medium heat. Add minced garlic and sauté for about a minute.
3. Add fresh spinach to the pan and cook until it wilts slightly.
4. Pour in the heavy cream and mix well. Let it simmer on low heat for a few minutes.
5. Stir in the grated Parmesan cheese until it melts into the sauce.
6. Season with salt and black pepper to taste.
7. Combine the cooked pasta with the sauce. If the mixture is too thick, add a little reserved pasta water.
8. Serve immediately, and if desired, garnish with pine nuts.
