Ingredients:
- 1 zucchini - 1 red bell pepper
- 1 yellow bell pepper
- 1 red onion
- 200 g cherry tomatoes
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1 tsp garlic powder
- Fresh herbs (e.g., basil or parsley) for garnish
Instructions:
1. Wash and chop all vegetables into bite-sized pieces. Slice the zucchini and bell peppers, cut the red onion into wedges, and leave the cherry tomatoes whole. 2. Place the vegetables in a large bowl. Add olive oil, balsamic vinegar, salt, black pepper, oregano, and garlic powder. Mix well to coat all the vegetables with the marinade.
3. Allow the vegetables to marinate for about 10-15 minutes.
4. Preheat the grill to medium heat. Place the marinated vegetables in a grill basket or directly on the grill grates.
5. Grill the vegetables for about 10-15 minutes, until they are tender and have nice grill marks, turning occasionally.
6. Remove the vegetables from the grill and sprinkle fresh herbs on top before serving.
