This delicious recipe combines refreshing gremolata with sweet vegetables and juicy grilled prawns. Perfect for summer barbecues!

Ingredients:

- Gremolata:
- Zest of 1 lemon
- 1 large clove garlic, minced
- 1 handful chopped parsley (flat-leaf or curly)
- Vegetables and Prawns:
- 500 g raw jumbo prawns
- 1 tbsp lemon juice
- A pinch of chili powder
- 1 clove garlic, grated
- A pinch of salt
- 1 tbsp olive oil
- 0.5 tsp salt (for gremolata)
- 2 tbsp olive oil (for gremolata)
- 1 small sweet potato
- 1 parsnip
- 100-200 g peas

Instructions:

1. In a bowl, mix the gremolata ingredients: lemon zest, minced garlic, and chopped parsley. Set aside.
2. Marinate the prawns by mixing lemon juice, olive oil, salt, grated garlic, and chili powder. Let them marinate for a few minutes.
3. Peel the sweet potato and parsnip. Cut them into even pieces and cook until "al dente" by boiling, roasting, or grilling.
4. Heat the peas in a pot or place them on a baking sheet.
5. Add salt and olive oil to the gremolata mixture, and mix well.
6. Combine the gremolata with the cooked vegetables in a serving dish and toss to combine.
7. Grill the marinated prawns until they take on a nice color but are not overcooked.
8. Serve the grilled prawns alongside the vegetables and gremolata.
