A crunchy and clumpy granola that's easy to make at home. Serve it with yogurt and fresh berries. Preparation Time: 30 minutes
Serving Size: 6 servings
Ingredients:
- 1 1/4 cups barley grains - 3/4 cup rolled oats
- 1/2 cup nuts (such as walnuts or almonds)
- 1/2 cup seeds (such as sunflower seeds or pumpkin seeds)
- 1/2 cup honey or maple syrup
- 1/4 cup vegetable oil (such as coconut oil or canola oil)
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- A pinch of salt
Instructions:
1. Preheat the oven to 350°F (180°C). 2. In a large bowl, mix together the barley grains, rolled oats, nuts, seeds, cinnamon, and salt.
3. In another bowl, combine the honey, vegetable oil, and vanilla extract. Mix well.
4. Pour the wet ingredients over the dry ingredients and stir until everything is well combined.
5. Spread the mixture evenly on a baking sheet lined with parchment paper.
6. Bake in the oven for about 20-25 minutes, stirring halfway through, until the granola is golden brown and crunchy.
7. Allow to cool before serving. The granola will clump together as it cools.
8. Serve with yogurt and fresh berries.
