Ingredients:
- 500 g potatoes
- 1 onion
- 2 cloves garlic
- 1 liter vegetable broth
- 200 g cheddar cheese
- 200 ml heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and chop the potatoes, onion, and garlic.
2. In a pot, heat a splash of oil and sauté the onion and garlic for a few minutes until fragrant.
3. Add the chopped potatoes to the pot and pour in the vegetable broth. Cook until the potatoes are tender.
4. Use an immersion blender to puree the soup until smooth.
5. Stir in the heavy cream and grated cheddar cheese, mixing until the cheese has melted.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with fresh parsley.
