Delicious and visually appealing, these Linzer cookies are easy to make and perfect for those with gluten intolerance, low-carb diets, egg allergies, or diabetes. An ideal treat for Valentine's Day or other celebrations!

Serving Size: About 12 cookie pairs
Ingredients:
- 200 g almond flour
- 50 g coconut sugar
- 60 g melted butter or coconut oil
- 1 tsp vanilla extract
- Raspberry or strawberry jam (for filling)
Instructions:
1. In a bowl, mix almond flour, coconut sugar, melted butter (or coconut oil), and vanilla extract until smooth dough forms.
2. Divide the dough into two parts and shape them into balls. Wrap the balls in plastic wrap and refrigerate for about 15 minutes.
3. Preheat the oven to 180°C (350°F).
4. Remove the dough balls from the fridge and roll them out to about 5 mm thick on a baking paper.
5. Cut out shapes like hearts or other forms, and make a hole in the center of each shape.
6. Place the cookies on a baking sheet and bake for about 10–12 minutes, until the edges are lightly golden.
7. Allow the cookies to cool, then fill the whole cookies with jam and top them with the cookies that have holes.
8. Serve and enjoy!
