A delicious gluten-free pancake perfect for breakfast or brunch.

Serving Size: 4 servings
Ingredients:
- 3 large eggs
- 3 dl gluten-free flour (such as regular and oat flour)
- 0.5 tsp salt
- 4 tbsp margarine, in pieces
- 1 tsp baking powder
- 3 tbsp quark
- 1 dl rolled oats
- 5 dl milk
Instructions:
1. In a mixing bowl, whisk together the eggs and quark until well combined.
2. Add the milk and mix well.
3. Gradually stir in the gluten-free flour, salt, baking powder, rolled oats, and pieces of margarine, mixing until you have a smooth batter.
4. Let the batter rest for about 15-30 minutes to thicken.
5. Cook the pancake in a waffle iron or in the oven at 225°C (437°F) for about 20-25 minutes, or until the top is golden brown.
6. Serve with your favorite toppings.
