Ingredients:

- 400 g tofu
- 2 tbsp soy sauce
- 1 tbsp liquid smoke
- 2 tbsp maple syrup
- 100 ml apricot jam
- 100 ml fresh orange juice
- 1 tbsp lemon juice
- 1 tsp ginger (grated or powdered)
- 1 tsp cinnamon
- Salt and pepper to taste
- Fresh herbs for garnish (e.g., parsley or thyme)

Instructions:

1. Prepare the Tofu: Drain the tofu and press out any excess moisture. Cut the tofu into cubes or slices.
2. Marinate the Tofu: In a bowl, mix soy sauce, liquid smoke, maple syrup, salt, and pepper. Add the tofu to the marinade and let it sit in the refrigerator for at least 30 minutes.
3. Make the Glaze: In a saucepan, combine apricot jam, orange juice, lemon juice, ginger, and cinnamon. Heat over medium heat until it starts to bubble. Let it simmer on low for about 5-10 minutes until it thickens slightly.
4. Cook the Tofu: Heat a skillet over medium heat and cook the marinated tofu for about 5-7 minutes on each side until golden brown.
5. Glaze the Tofu: Pour the apricot-orange glaze over the cooked tofu and let it simmer for a few minutes until the tofu is well-coated.
6. Serve: Transfer the glazed tofu to a serving dish and garnish with fresh herbs. Enjoy at festive gatherings or special occasions!
